Whole fresh salmon makes a showstopping centerpiece and being quick and simple to cook, it is one of Ireland’s most popular choices. The flavour is distinctive and delicious and enjoyed by all. Whole salmon is perfect for baking in the oven or poaching in a fish-kettle (depending on the size of the fish!). Why not wrap it in tin-foil with herbs, butter and a little wine and roast it on the barbecue?

Your whole salmon will be delivered to you gutted and cleaned – you can ask for the head and/or tail to be removed if you wish. There will be bones present in the fish (cooking fish with bones improves flavour, just make sure to tell your guests to look out for them.)
Fresh fish is best eaten on the day of delivery, definitely within 4 days. Keep refrigerated. Freezing - should be frozen immediately on delivery and consumed within 2 months. Do not re-freeze defrosted fish.

Provenance

All of our fish comes from sustainable sources and is of the highest quality and freshness. We source our salmon from farms in the open sea off the Scottish Hebrides and the cold, fresh waters of the fjords of Norway - areas that produce top quality salmon safely to very high standards.
